Curry Chicken… Pizza!

A few friends have been talking about pizza lately so it was on my mind and while daydreaming I wondered why there were new types of pizza but I’d never heard of curry pizza.  Of course, Google knows all and I got a few ideas but decided to make my own today and it was excellent!

Here’s the recipe.  I didn’t measure exact amounts but hey, it’s pizza, you can eyeball it.  Vegetarians can just replace the chicken with tofu or some other demon-spawned meat replacement.

2 Garlic Naan
Garlic Hummus
1/2 Medium Onion
2 Skinless Chicken Breasts
1/2 can Curry Sauce (we had Madras in the cupboard so I used that)
Mozarella

Pre-cook the chicken breasts — I have a “contact grill” that’s perfect for this.  Pre-heat your oven to 425 degrees.

Spread hummus on the naan, dice the 1/2 Onion and sprinkle over the hummus.  Dice the chicken breasts and place over all that, then cover with a moderate amount of curry sauce.

Now grate the mozarella cheese and cover the pizza.  Put your curry chicken pizzas into the oven and cook until the cheese starts to bubble (I didn’t time it, sorry, so keep an eye out).

Mel found it tasty but thought it was a bit too spicey for her.  I believe the curry sauce in a can may need to be “cut” with something else, possibly yogurt, but I thought it was great.
